The glycemic index (GI) of a carbohydrate is a measure of that food's impact on blood glucose.. High glycemic index foods raise blood glucose and insulin more than low glycemic index foods. The glycemic load (GL) of a food tells you how much of the carbohydrate is in that particular food. Watermelon has a high glycemic index (~70 for a 120 gram serving), but a very low glycemic load (4) because there is alot of water in watermelon.
